- 4 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 4 slices bacon, cooked and crumbled
- 2 green onions, chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and cook for about 5 minutes, until softened.
- Add the minced garlic and cook for 1 more minute.
- Stir in the diced potatoes, chicken broth, salt, pepper, and paprika. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Use a potato masher or immersion blender to mash some of the potatoes in the soup to create a creamy texture, leaving some chunks for texture.
- Stir in the heavy cream and milk, and simmer for another 5 minutes.
- Remove the pot from heat and stir in the shredded cheddar cheese and sour cream until the cheese is melted and the soup is smooth.
- Serve the soup hot, topped with crumbled bacon, green onions, and extra cheddar cheese if desired.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream and low-fat milk.
- Can be made ahead of time and reheated. The soup thickens as it sits, so you may need to add more milk when reheating.
- Top with additional bacon or sour cream for extra flavor.
