- 1/4 cup milk
- 1 tablespoon fresh parsley, chopped
- Vegetable oil for frying
- 1/2 cup goat cheese
- 2 tablespoons heavy cream
- 1 teaspoon lemon juice

Instructions
- In a bowl, combine flour, Parmesan cheese, garlic powder, salt, and pepper.
- In a separate bowl, whisk together the egg and milk. Add the wet ingredients to the dry mixture and stir until combined. Fold in the chopped artichoke hearts and parsley.
- Heat vegetable oil in a deep pan or fryer over medium heat, ensuring the oil reaches 350°F (175°C).
- Spoon tablespoons of the artichoke mixture into the hot oil, frying a few fritters at a time for 2-3 minutes on each side, until golden brown and crispy.
- Use a slotted spoon to remove the fritters and place them on a paper towel-lined plate to drain excess oil.
- For the whipped goat cheese, combine goat cheese, heavy cream, lemon juice, and a pinch of salt in a food processor or with a hand mixer. Whip until smooth and creamy.
- Serve the fritters warm with a dollop of whipped goat cheese on the side for dipping.
Notes
- For added flavor, sprinkle the fritters with extra parsley or grated Parmesan after frying.
- These fritters can be made ahead of time and stored in the fridge for up to 2 days. Reheat them in the oven to maintain crispiness.
