Description

Artichoke Fritters with Whipped Goat Cheese are crispy, golden fritters filled with tender artichokes and served with a creamy, tangy whipped goat cheese dip. A perfect appetizer or snack.

  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup milk
  • 1 tablespoon fresh parsley, chopped
  • Vegetable oil for frying
  • 1/2 cup goat cheese
  • 2 tablespoons heavy cream
  • 1 teaspoon lemon juice
  • Salt to taste

Instructions

  1. In a bowl, combine flour, Parmesan cheese, garlic powder, salt, and pepper.
  2. In a separate bowl, whisk together the egg and milk. Add the wet ingredients to the dry mixture and stir until combined. Fold in the chopped artichoke hearts and parsley.
  3. Heat vegetable oil in a deep pan or fryer over medium heat, ensuring the oil reaches 350°F (175°C).
  4. Spoon tablespoons of the artichoke mixture into the hot oil, frying a few fritters at a time for 2-3 minutes on each side, until golden brown and crispy.
  5. Use a slotted spoon to remove the fritters and place them on a paper towel-lined plate to drain excess oil.
  6. For the whipped goat cheese, combine goat cheese, heavy cream, lemon juice, and a pinch of salt in a food processor or with a hand mixer. Whip until smooth and creamy.
  7. Serve the fritters warm with a dollop of whipped goat cheese on the side for dipping.

Notes

  • For added flavor, sprinkle the fritters with extra parsley or grated Parmesan after frying.
  • These fritters can be made ahead of time and stored in the fridge for up to 2 days. Reheat them in the oven to maintain crispiness.
