- 1 medium apple, peeled, cored, and diced
- 2/3 cup heavy cream, plus more for brushing
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the raisins and diced apple.
- In a separate bowl, whisk the cream, egg, and vanilla together.
- Pour the wet ingredients into the dry and mix until just combined; do not overmix.
- Turn the dough onto a floured surface, gently knead a few times, and shape into a 1-inch thick circle.
- Cut into 8 wedges and place on the prepared baking sheet.
- Brush the tops with extra cream.
- Bake for 15–18 minutes until golden brown. Let cool slightly before serving.
