Ingredients

  • 6 tablespoons unsalted butter, cold and cubed
  • 1/2 cup raisins
  • 1 medium apple, peeled, cored, and diced
  • 2/3 cup heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the raisins and diced apple.
  5. In a separate bowl, whisk the cream, egg, and vanilla together.
  6. Pour the wet ingredients into the dry and mix until just combined; do not overmix.
  7. Turn the dough onto a floured surface, gently knead a few times, and shape into a 1-inch thick circle.
  8. Cut into 8 wedges and place on the prepared baking sheet.
  9. Brush the tops with extra cream.
  10. Bake for 15–18 minutes until golden brown. Let cool slightly before serving.
