Instructions
- Preheat the oven to 180°C and line an 8 by 8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, all purpose flour, baking powder, ground cinnamon, and salt.
- In a separate bowl, whisk together the eggs, brown sugar, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the peeled and diced apples until evenly distributed.
- Spread the mixture evenly into the prepared baking pan, pressing lightly to level the surface.
- Bake for 30 to 35 minutes until golden and set in the center.
- Allow the bars to cool completely in the pan before removing.
- Drizzle the creamy peanut butter evenly over the top, then slice into 9 bars and serve.
