Description

Soft and cozy apple cinnamon breakfast bars made with hearty oats, tender diced apples, warm cinnamon, and finished with a creamy peanut butter drizzle. Perfect for meal prep, quick breakfasts, or a comforting snack.

  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon

  • 2 medium apples, peeled and diced (about 2 cups)
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons creamy peanut butter (for drizzling)


Instructions

  1. Preheat the oven to 180°C and line an 8 by 8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, all purpose flour, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, brown sugar, milk, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the peeled and diced apples until evenly distributed.
  6. Spread the mixture evenly into the prepared baking pan, pressing lightly to level the surface.
  7. Bake for 30 to 35 minutes until golden and set in the center.
  8. Allow the bars to cool completely in the pan before removing.
  9. Drizzle the creamy peanut butter evenly over the top, then slice into 9 bars and serve.
