- 1 1/3 cups apple cider
- 2 1/4 cups flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 4 tablespoons unsalted butter, melted
- 2 teaspoons vanilla extract
- Vegetable oil, for frying
Sugar Coating:
- 1 cup sugar
- 3/4 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cardamom
Instructions
- Pour apple cider into a saucepan and simmer until reduced to about 1/3 cup. Let cool slightly.
- In a bowl, whisk together flour, sugar, baking powder, salt, baking soda, cinnamon, nutmeg, allspice, and cardamom.
- In another bowl, whisk reduced cider, egg, egg yolk, melted butter, and vanilla extract.
- Combine wet and dry ingredients until a soft dough forms. Chill for 30 minutes.
- Roll dough to 1/2 inch thick and cut into donut shapes.
- Heat oil to 350°F and fry donuts for 1 minute per side until golden brown.
- Mix sugar and spices for coating. Toss warm donuts in spiced sugar mixture.
- Serve warm and enjoy with coffee or hot apple cider.
Notes
- Reduce apple cider before mixing for a strong flavor.
- Keep oil between 350°F and 365°F for even frying.
- Don’t overmix the batter or the donuts will be dense.
