Description

Warm, spiced, and perfectly crisp, these Apple Cider Donuts are packed with cozy fall flavor. Each donut is fried to golden perfection, coated in cinnamon-sugar, and bursting with the sweetness of reduced apple cider.


Ingredients

  • 1 1/3 cups apple cider
  • 2 1/4 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • Vegetable oil, for frying

Sugar Coating:

  • 1 cup sugar
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom


Instructions

  1. Pour apple cider into a saucepan and simmer until reduced to about 1/3 cup. Let cool slightly.
  2. In a bowl, whisk together flour, sugar, baking powder, salt, baking soda, cinnamon, nutmeg, allspice, and cardamom.
  3. In another bowl, whisk reduced cider, egg, egg yolk, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients until a soft dough forms. Chill for 30 minutes.
  5. Roll dough to 1/2 inch thick and cut into donut shapes.
  6. Heat oil to 350°F and fry donuts for 1 minute per side until golden brown.
  7. Mix sugar and spices for coating. Toss warm donuts in spiced sugar mixture.
  8. Serve warm and enjoy with coffee or hot apple cider.

Notes

  • Reduce apple cider before mixing for a strong flavor.
  • Keep oil between 350°F and 365°F for even frying.
  • Don’t overmix the batter or the donuts will be dense.
  • Chill dough before cutting to make it easier to handle.
