- 1 can (14 oz) full-fat coconut milk (chilled overnight)
- 200g dark chocolate (vegan, 70% cocoa or higher)
- 1 tablespoon maple syrup (or agave syrup)
- 1/4 cup pistachios, chopped (for garnish)
Instructions
- Chill the coconut milk in the fridge overnight to ensure it solidifies and separates into thick cream.
- In a heatproof bowl, melt the dark chocolate using a double boiler or microwave, stirring every 20 seconds until fully melted and smooth.
- Open the can of coconut milk and scoop out the solidified coconut cream into a mixing bowl. Discard the liquid or save it for another use.
- Add the melted chocolate and maple syrup to the coconut cream. Whisk until smooth and fully combined, forming a rich mousse texture.
- Transfer the mousse into serving dishes and refrigerate for at least 1-2 hours to firm up.
- Before serving, sprinkle with chopped pistachios for a crunchy, nutty topping.
- Serve chilled and enjoy!
Notes
- For an extra flavor boost, you can add a pinch of sea salt or a drop of vanilla extract to the mousse mixture.
- If you don’t have maple syrup, agave syrup or another sweetener of your choice can be used instead.
