Description

This 4-ingredient vegan chocolate mousse with pistachios is a creamy and decadent dessert made with simple plant-based ingredients. The rich chocolate flavor is balanced with a crunchy pistachio topping, making it a perfect vegan treat.


Ingredients

  • 1 can (14 oz) full-fat coconut milk (chilled overnight)
  • 200g dark chocolate (vegan, 70% cocoa or higher)
  • 1 tablespoon maple syrup (or agave syrup)
  • 1/4 cup pistachios, chopped (for garnish)

Instructions

  1. Chill the coconut milk in the fridge overnight to ensure it solidifies and separates into thick cream.
  2. In a heatproof bowl, melt the dark chocolate using a double boiler or microwave, stirring every 20 seconds until fully melted and smooth.
  3. Open the can of coconut milk and scoop out the solidified coconut cream into a mixing bowl. Discard the liquid or save it for another use.
  4. Add the melted chocolate and maple syrup to the coconut cream. Whisk until smooth and fully combined, forming a rich mousse texture.
  5. Transfer the mousse into serving dishes and refrigerate for at least 1-2 hours to firm up.
  6. Before serving, sprinkle with chopped pistachios for a crunchy, nutty topping.
  7. Serve chilled and enjoy!

Notes

  • For an extra flavor boost, you can add a pinch of sea salt or a drop of vanilla extract to the mousse mixture.
  • If you don’t have maple syrup, agave syrup or another sweetener of your choice can be used instead.
