Description

A creamy, comforting one pan broccoli cheddar chicken and rice skillet that comes together in just 30 minutes. Tender chicken, fluffy rice, and vibrant broccoli are coated in melty cheddar for a cozy, family friendly dinner.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into small bite sized pieces
  • 1 cup long grain white rice, uncooked
  • 2 cups broccoli florets, chopped into small pieces
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cups freshly shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 2 to 3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Add chicken pieces, season with salt and black pepper, and cook for 5 to 6 minutes until lightly browned and cooked through.
  4. Stir in uncooked rice and chopped broccoli florets, mixing well to combine.
  5. Pour in chicken broth and bring to a gentle simmer. Cover and cook for 15 to 18 minutes until rice is tender and liquid is absorbed.
  6. Remove skillet from heat and stir in shredded cheddar cheese until fully melted and creamy.
  7. Let rest for a few minutes, then serve warm.

Notes

  • Shred cheese from a block for smoother melting and better texture.
  • If reheating, add a splash of broth to loosen the rice and restore creaminess.
  • Cut broccoli into small, even pieces so it cooks evenly with the rice.
