- 1 pound boneless skinless chicken breast, cut into small bite sized pieces
- 1 cup long grain white rice, uncooked
- 2 cups broccoli florets, chopped into small pieces
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 1/2 cups freshly shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook for 2 to 3 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add chicken pieces, season with salt and black pepper, and cook for 5 to 6 minutes until lightly browned and cooked through.
- Stir in uncooked rice and chopped broccoli florets, mixing well to combine.
- Pour in chicken broth and bring to a gentle simmer. Cover and cook for 15 to 18 minutes until rice is tender and liquid is absorbed.
- Remove skillet from heat and stir in shredded cheddar cheese until fully melted and creamy.
- Let rest for a few minutes, then serve warm.

- Shred cheese from a block for smoother melting and better texture.
- If reheating, add a splash of broth to loosen the rice and restore creaminess.
